Life is often better when it’s simple, food similarly.
This salad is simplicity personified. It requires no enhancements other than the basic flavours of life – salt, pepper, lemon and garlic. Refreshing, healthy and pretty too – damn it, I’m aspiring to be a salad now?
Serves 2 as a side salad
2 medium beetroots – grated
2 medium carrots – grated
juice of one lemon
1 small tub of low fat plain yoghurt
half clove garlic, crushed
mix the carrot, beetroot, lemon and salt and put in the fridge to marinate for a couple of hours to allow the vegetables to soften slightly
mix the garlic with the yoghurt and serve in a separate bowl. Spoon yourself generous portions of both the salad and the yoghurt to make a light accompaniment for grilled chicken or grilled goats cheese on toast.
