Pomegranate, Pistachio and Goats Cheese Couscous

This is one of my favorite salads. It looks beautiful and is really very easy. I make it when we’re camping as it goes perfectly with any barbecued lamb.

Serves 6

200g couscous
250g soft goats cheese
200g pomegranate seeds
80g pistachios
1 red onion – finely chopped
1 bunch coriander – roughly chopped
Juice of 1 lime
3 tbsp extra virgin olive oil
Put the couscous into a bowl and pour over enough boiling water to just cover. As quickly as possible seal the bowl with cling film and leave to steam whilst you prepare the other ingredients.
Once the couscous has cooled remove the cling film and fluff with a fork. Toss in everything except the cheese and mix thoroughly. Gently cut the cheese into 1 cm cubes and fold in as carefully as possible. It will absorb the couscous and melt into the background, lurking there to surprise the hungry mouth with a bite of cream and lemon that comes with young goats cheese.
Goes perfectly with the Barbecued Tandoori Leg of Lamb

    Recipe sounds great but how much exactly is “2 soft goats cheese” does this means ounces, tablespoons, packages etc? Thanks for clarifying.
